It can be kept in a dark, cool place for a long time if stored properly. To prolong the shelf life of opened kefir, keep it cool and transfer it to an airtight container. It should be noted that while vinegar does extend the shelf life of other foods, these other foods are never extended forever. Once you open a bottle with a screw on lid, it will usually last about 3 days.
